How grease traps (or grease interceptors) work
Grease traps (also known as grease interceptors) are designed to stop or intercept grease and oils before they enter the drains and septic tank system.
Septics tanks can cope with small amounts of grease and oil - they generally form part of the scum layer floating on the top - but huge amounts, particularly from commercial kitchens can cause major (potentially expensive) problems with your septic tank system including possible blocked drains and untreated sewage getting into the environment.
